A few months ago I changed something, (in the registry I think), so that my
IE 8 (Version 8.0.6001.18702) reports to an application that it is v7.*
(can't remember which app.),
...now Youtube is complaining that support is ending for IE v.7.* etc.
...so can anyone point me to undoing what I did backalong ?

You probably changed the user agent string in the Registry. Try the
Registry script on the web page linked below, called "Undo User-Agent
registry overrides"
Internet Explorer - User-Agent test and override registry scripts http://www.enhanceie.com/ua.aspx
In the future, if you want to be able to change the user agent string
for IE8 on the fly, use their free IE add-on, UAPick:
Bayden Systems - UAPick http://www.enhanceie.com/ietoys/uapick.asp
