Without my changing any settings in my Windows Media Player 10, now, when I
minimize it, it goes to the task bar with the small control center. This is
irritating to me and I want to disable that. However, even though I'm quite
certain I found where to do that in the past, I cannot find where to do it
now. Any help would be appreciated.

Right-click on a blank area of the taskbar (where media player
minimises to) - anywhere apart from where there's an icon or program
button.
From the popup menu shown on right-click, choose "Toolbars" then
uncheck the windows media toolbar option.
Media player will then munimuse to just a button on the taskbar rather
than the toolbar player
